Lamb. BBQ. What’s not to like?
I confess, this was a few weeks into lockdown and I really can’t remember much of what went into this rub/marinade, but I can guess based on what it looks like and what I know of my own habits.
I’d tend to mix up a rub in a bowl, so I could make a rough mental note of the amounts I’d use, before then marinading on the meat for ideally, 24 hours, but sometimes just a few hours during the day before cooking.
Here I’m pretty sure this marinade consists of sweet smoked paprika, salt, pepper, olive oil, mixed herbs (or similar dried herbs), and chopped spring onion. Back then, I had a cheap kettle BBQ from somewhere like B&Q. It was a good little BBQ and did me proud – considering I probably only spent £50 or so on it.
One thing I learnt a long time ago, is that I know roughly how long something’s going to take to cook, but basically, it’s done when it’s done. Hence, this wrapped up little badboy has a thermometer sticking out of it.
This was pre-MEATER (my life is measured now in pre-MEATER and post-MEATER). I think the thermometer I’m using here was a cheap ‘n cheerful one I bought online, which had two probes, and I tended to use one to measure the meat and one to measure the pit.
That lamb cooked for “some time” (this was lockdown after all, I’d probably had 32 glasses of wine by this point in the day). I then took it out the foil, so I could finish the outside with a bit of heat and give it a nice char.
After that, it rested for some time, before slicing and serving up as a Roast Dinner.
Looking at that plate, I can tell you – the gravy would have been a simple gravy made mostly from the juices whilst it rested, the yorkshires were “keto” yorkshires (they’re made with arrow root, double cream and an egg, if I recall correctly) and then we’ve got some roasted butternut squash, a couple of roast potatoes and some brocolli to pretend I’ve got something half healthy.
Things I’d do better if I were to do this again? Not a lot, actually, that was a pretty decent result. The lamb could have been rested longer, from what I recall, but again – I’m trying to think back a couple of years as I write this!
